I recently found myself in a bar/restaurant in Wisconsin where they served candied sweet potato fries, just in case you weren’t getting enough calories from “ordinary” candied yams. Deep frying in lard guarantees you’ll get the extra insulation necessary to make it through a long, Wisconsin winter.
